1. Application of bromelain in food processing industry

Baked goods: Bromelain is added to the dough to degrade the gluten, and the dough is softened for easy processing. And can improve the taste and quality of biscuits and bread.

Cheese: used for the coagulation of casein.

Meat tenderization: Bromelain hydrolyzes the macromolecular protein of meat protein into easily absorbed small molecular amino acid and protein. It can be widely used in the finishing of meat products.

The application of bromelain in other food processing industries, some people have used bromelain to increase the PDI value and NSI value of soy cake and soy flour, so as to produce soluble protein products and breakfast, cereals and beverages containing soy flour.
