Description:
Inulin is a soluble fiber produced by many types of plants, including wheat, onion, bananas, garlic, asparagus, sunchoke and chicory. Just like starch, Inulin is a way that is used by these plants to reserve energy. Industrially, it is most often extracted from sunchoke and chicory root. It is a group of polysaccharides that are primarily long chains of fructose with a few glucose units. Inulin is considered as a functional food ingredients since it can affect physiological and biochemical processes in human beings, resulting in better health and reduction in the risk of many diseases. The soluble fiber is often incorporated into processed foods to add fiber, bulk and a sweet flavor. Inulin can also be used for the preparation of oligofructose and fructose syrups.
Chicory, of the dandelion family, is a biennial plant that grows as a in its native Mediterranean. It grows as a rosette of irregularly-toothed basal leaves in the first year after sowing. Then, in the second year, leafless stems emerge with bright blue daisy-like flowers scattered along their length. Its leaves are sometimes used as salad greens, and the roasted roots are ground and added to coffee or used as a coffee substitute.
Sunchoke, also known as Jerusalem artichoke or sunroot, is a native North American plant in the sunflower family. It has a coarse, 5- to 10-foot tall stem, large leaves with a rough upper surface, bright yellow sunflower-like flowers, and fleshy tubers resembling thin, knotty potatoes. The funny-looking tubers, with a delicate, artichoke-like flavor, are used as a root vegetable.
