Almond flour is made from ground, blanched almonds. Almond flour is made by removing the skins of the almonds by boiling them in water, and then by grinding and sifting the almonds into a fine flour-like consistency. Almond flour's best-known attribute is that it is gluten-free. Gluten is a protein found in some grain flours and is particularly high in wheat flour. Gluten is what makes dough made with wheat flour stretchy thus enabling it to rise. It is the source of the chewy texture in wheat bread. Almonds contain good fats and a lot of fiber, and are low in carbohydrates. Not only is almond extract healthy for you, but it is also beneficial to your skin.
